We used chicken thighs for their guaranteed juiciness and flavor, but feel free to use breasts if you prefer those. There are 2 cans of beans in this recipe, and after draining and rinsing them, one gets mashed with a fork or masher. It melts right into the chili mixture to make it creamy and delicious! We also used a diced poblano chili pepper, but Anaheim chilis or a can of green chilis work amazing as well.
This easy, healthy and delicous slow cooker recipe is great for a family meal, and is sure to be a crowd-pleaser if you make it for your next party.
Ingredients

2 lbs boneless, skinless chicken thighs or breasts, trimmed

2 cans white beans (drained and rinsed); 1 mashed with fork or masher

1 Spicekick Chili seasoning packet

1 poblano pepper, diced (or 1 small can diced green chilis)

1 ½ cups chicken broth or bone broth
Directions
Combine all ingredients in a slow cooker, stir, and cook on low for 5 hours.
Transfer the cooked chicken to a plate and shred with 2 forks or a meat shredder. Add back into the slow cooker and stir.
Serve with lime wedges and diced avocado.
