2-Bean Vegetarian Chili with Sweet Potato

Try this 2-Bean Chili with Sweet Potato which is a hit with vegetarians. Just add all the ingredients in a slow cooker and it's ready in 3 hours!
Ingredients

1 pkg. Spickekick Chili Spice Kit

1 (15-oz) can kidney beans, rinsed and drained

1 (15-oz) can black beans, rinsed and drained

1 medium sweet potato, peeled and diced

1 medium diced bell pepper (use your favorite—green, red, or yellow)

1 (14-oz) can crushed tomatoes

1 c. vegetable broth
Directions
Add all the ingredients to a slow cooker*. Stir. Cover. Cook on low for 3 hours.
*You may alternatively simmer all the ingredients in a pot for about 30 minutes.
Serve with: avocado, cheese, scallions
