A delicious vegetarian Bok choy stir-fry featuring black beans and mushrooms, ready in under 20 minutes using Spicekick® Lettuce Wrap seasoning. This is a great way to enjoy stir fry vegetables.
Stir-fry 1 lb. (total) quartered mushrooms and chopped Bok Choy (or shredded cabbage), about 5 minutes.
Add 1 can rinsed and drained black beans, Spicekick® Lettuce Wrap seasoning mix, 1 TBSP. soy sauce or tamari, and ¾ cup water. Stir and simmer until thickened, a few minutes.

Serve this Bok choy stir fry alongside rice or soba noodles, and top with scallions and sesame seeds if desired. Enjoy!
