This Asian meatball recipe is a great chicken meatball in air fryer.
Ingredients
-
1 pound ground chicken
-
1 packet Spicekick Lettuce Wrap seasoning mix
-
1 large egg
-
3 tablespoons breadcrumbs (we like to use panko in this)
-
1 tablespoon soy sauce or tamari
-
1 tablespoon water
-
2 tablespoons cooking oil (we like avocado oil)
-
For serving: Szechuan sauce, soy sauce and sesame oil, peanut sauce, or teriyaki sauce
Directions
Preheat air fryer on air fry setting at 400 degrees F.
Pour half the oil into a wide shallow dish or plate.
Combine the chicken, seasoning mix, egg, breadcrumbs, soy sauce, and water in a medium mixing bowl.
Shape the meat into meatballs, about 1 ½ tablespoons each*, placing them into the shallow dish. Drizzle the meatballs with the remaining half of oil and gently roll the meatballs in the oil to coat evenly.
Place the meatballs in the air fryer in a single layer. Cook 5 minutes, until browned.
Coat lightly in your choice of warmed sauce.**
Recipe Note
*To shape the meatballs, I use a small mashed potato scoop or meatball press. If you have neither, use a rounded tablespoon measure and your hands to shape.
**Optional: garnish with sesame seeds and chopped scallions.
Food pairing: We love this served on top of stir-fried bok choy.
