For the toppings:
Directions
Preheat oven to 350 degrees F. Spray a 9 x 9-inch pan with cooking oil spray.
To make the chili:
Heat a large skillet on medium-high heat. Add the oil.
When the oil is shimmering, add the beef and spread it out in the pan, allowing it to cook for a few minutes. When browned on the bottom, break up the beef with a flat-edged wooden spoon and cook until done, a couple more minutes, reducing heat to medium as needed.
Sprinkle in the Spicekick® Chili Seasoning Mix and add the crushed tomatoes. Bring to a simmer. If the beef and tomatoes become too thick, thin with a bit of water.
Stir in the beans, or you can sprinkle them into the pan later.
To assemble:
Spread 1-2 cups of corn chips on the bottom of the pan. Layer on half of the beef filling. Sprinkle half of the cheese. Layer with 1-2 cups chips, remaining half of meat mixture, and remaining half of the cheese.
Cover loosely and bake until the cheese melts completely and the pan is sizzling around the edges, about 20-25 minutes.
Serve with your favorite toppings.
