Beef Chili Recipe with Bell Peppers
I was inspired by the Beef It's What's for Dinner and Produce for Better Health event at FNCE (Food and Nutrition Conference & Expo) last week to create a balanced dish with one of my favorite combinations – beef and produce. So I created one of my favorite fall dishes for slow cooker beef chili.

Beef Chili Recipe with Bell Peppers

Ingredients
1 tsp. cooking oil
1 lb diced Beef Sirloin
1 medium bell pepper, diced
1 can kidney beans, rinsed and drained
1 (15-oz) can crushed tomatoes
1 pkg. Spicekick® Chili Seasoning Mix
3/4 c. water
Directions
Heat a large sauté pan on medium-high heat. Add the beef in a single layer and brown, about 5 minutes. Add the beef to the slow cooker, scraping in the browned bits.
Put the same pan on medium heat. Add the bell pepper and sauté until tender, about 5 minutes. Add to the slow cooker.
Add the beans and crushed tomatoes to the slow cooker.
Sprinkle in the seasoning mix. Pour in water. Stir. Cover. Cook on low until beef is tender, about 4 hours.
Garnish with avocado and cheese.
