Ingredients

1 pkg. Spicekick Ramen Seasoning

1 1/2 lbs. pork butt/shoulder, trimmed, cut into 2-inch chunks

1 tablespoon neutral oil, like vegetable, avocado, or canola

8 scallions

1/3 cup soy sauce or tamari

8 cups water

4–6 oz (wt) dry ramen noodles

Serve with: soft-boiled eggs, nori, bean sprouts
Directions
Preheat large pot on medium-high heat. Add oil.
Brown pork on one side, about 15 minutes. Turn
Add spice kit, white parts of scallions, water, and soy sauce.
Simmer 45 minutes, lid ajar. Remove seaweed and scallions.
Turn heat to high to bring to boil. Add ramen. Cover, turn off heat, and allow ramen to sit until tender, about 3-4 minutes.
Shred pork with two forks. Spoon into bowls, sprinkle with green chopped scallions.
